Sautéed Assorted Mushrooms

Ingredients

2 to 3 lbs of sliced assorted mushrooms (the more kinds the better)
1 tin (2oz/55g) anchovies
4 pieces sun dried tomatoes (cut up)
2 large cloves of garlic (sliced)
2 large sprigs of rosemary
¼ cup balsamic vinegar
¼ cup Marsala wine
¼ cup extra virgin olive oil
salt and pepper to taste

Preparation

In a large frying pan add the olive oil, garlic and anchovies. Mix and heat until the garlic begins to sauté.

Carefully add the mushrooms, sun dried tomatoes and rosemary. Sauté uncovered until the mushrooms reduce to about ¼ of their original volume.

Add the balsamic vinegar, Marsala wine, salt and pepper.

Sauté for another 5 minutes.

Serve immediately. May be served with French or Italian bread on the side for dipping.
