Chicken with Vegetables and Pear

Salmon or scallops may be substituted for chicken in this recipe.

 

Ingredients

1lb chicken breast (or tenders) cubed
3 large carrots sliced
1 large Bartlett pear cubed
1 large chopped sweet red paper
1 can (3.5oz, 99g) pitted chopped black olives (reserve liquid)
2 chopped large cloves of garlic
1 chopped medium yellow onion
2/3oz (18.6g) fresh chopped basil
1 sliced large Portabella mushroom

2/3cup extra virgin olive oil
Juice from 2 lemons
Salt and pepper to taste

Grated Parmesan cheese

Angel hair or vermicelli or other thin pasta

Preparation

I use a large electric Belgique frying pan to prepare this recipe.

Sauté chicken in olive oil until brown.
Add garlic, onion, basil, mushrooms and carrots
Sauté for another 10 minutes
Add sweet red pepper, pear and black olives and some olive liquid
Sauté for another 5 minutes
Add lemon juice

Mix pasta and prepared chicken with vegetables and pear together.
