Chicken with Vegetables and Pear Salmon or scallops may be substituted for chicken in this recipe.
Ingredients 1lb chicken breast (or tenders) cubed 2/3cup extra virgin olive oil Juice from 2 lemons Salt and pepper to taste Grated Parmesan cheese Angel hair or vermicelli or other thin pasta Preparation I use a large electric Belgique frying pan to prepare this recipe. Sauté chicken in olive oil until brown. Mix pasta and prepared chicken with vegetables and pear together.
