Vinnie's Polenta

Ingredients

1 can 10¾ oz (305g)  Campbell's condensed Broccoli & Cheese Soup 1 can 2oz (55g) Anchovies
2 cups (125g) Polenta 1/3 cup (75mL) Extra Virgin Olive Oil
1 large chopped onion  1½ oz (43g) diced dried Tomatoes
2 cloves of minced garlic 1 can 3.5oz (99g) chopped pitted Black Olives
3 oz (85g) Portabella Mushrooms fresh chopped Basil
6 cups (1.5 L) water 6 chicken or beef bouillon cubes
1 tablespoon white pepper

Preparation

Boil the water and add the bouillon cubes. Let the cubes dissolve.

Heat the Olive Oil in a frying pan and sauté the minced Garlic, chopped Onion, Anchovies, dried Tomatoes, Mushrooms, Olives and Basil.

Add the Polenta to the boiling broth and mix well to avoid lumps.

Taste the Polenta to make sure that it is cooked. When the Polenta is ready, add the sauté mixture and the condensed soup to the Polenta and continue to mix well.

Bake this Polenta in a small baking dish at 350°F for 30 minutes.

Notes

Some people do not like Anchovies. They are used for flavor and blend in nicely with the other ingredients.

Other types of Campbell's condensed soups may be used such as Tomato or Cream of Mushroom.

Of course other vegetables such as sweet red pepper may be substituted  or some of the above vegetables left out. Dried tarragon may be substituted for the basil.

I have served this dish with Organic Apples Cider Vinegar. It tastes great.
