Healthy Muffins
This muffin recipe may
appear to be difficult to put together. Once you try this muffin recipe I guarantee
you will want to use it again.
I use
this recipe to make 6 large muffins.
Ingredients:
| 1 cup (250mL) of King Arthur whole wheat flour |

2 eggs |

1 cup (250mL) Corn Meal |
|
1/3 cup
(755mL) Canola Oil |
| 1 teaspoon Salt |
|
1 cup (250mL) Whole Milk |
| 1 tablespoon Baking Soda |
|
½
cup
(125mL) Crosby's
Molasses |
| 2 tablespoon Baking Powder |
|
½ cup (125mL) Brown Sugar |
| 1 tablespoon Allspice |
|
1 cup
(160mL) chopped Dates or Raisins |
| 5 tablespoons Cinnamon |
|
1 cup (250mL) Apple Sauce |
| 1
½ cups fresh rinsed Cranberries |
|
2 Bananas |
| |
|
1 cup (250mL) chopped Walnuts |
Muffin dish:
| I use a 2 inch (5cm) deep ceramic muffin dish. If using
this type of muffin dish pre-heat the oven to 400ºF
(200ºC). I have never used
a metallic muffin dish for this recipe. |
Directions:
If using raisins skip this step and proceed to next step. Chop up the dates.
Remember to remove the large seeds from each date.
Into a bowl add the Corn Meal and Milk. Mix well and set
aside. (bowl 1)
In a smaller mixing bowl mash the 2 bananas. Add the
Eggs, Brown Sugar, and
Molasses. Mix well. (bowl 2)
In a large mixing bowl add the flour, salt,
baking soda, baking powder, allspice, and cinnamon. Mix well.
(bowl 3)
Add the contents of bowls 1 and 2 to bowl 3. Add the Apple
Sauce and Canola Oil. Mix well.
Add the Cranberries and Walnuts. Mix well.
Add the dates or raisins. Mix well. Note:
This fruit helps to reduce the sourness of the Cranberries.
Using a well-insulated pot holders, carefully remove muffin
dish from oven. Pour or spoon mixed batter into the muffin molds.
Again using well-insulated pot holders, put the muffin
dish back into the oven. Bake for 25-30 minutes. The muffins should be brown and
be very firm to the touch when done.
